Dried White Beans Provencal (Haricots Blancs a la Provencal) 2 cups dried
white beans Soak beans overnight. Drain thoroughly. Put them in a casserole with the olive oil, bacon, onions, garlic, and the tomato or puree. Add the bouillon, salt, and pepper. Cover the casserole and bake for 4 hours at 300-degrees. The sauce should be well reduced. Strew with parsley before serving. *Canned beans may be used if well-drained and well-rinsed |
