A Recipe for Dried White Beans

Provencal

Dried White Beans Provencal (Haricots Blancs a la Provencal)

2 cups dried white beans
1/2 cup olive oil
2 slices bacon
3 small onions, peeled and quartered
1 whole clove garlic, peeled
1 large tomatoe or 1/4 cup puree
1.5 cups bouillon
Salt
Freshly milled pepper
Parsley for garnish

Soak beans overnight. Drain thoroughly. Put them in a casserole with the olive oil, bacon, onions, garlic, and the tomato or puree. Add the bouillon, salt, and pepper. Cover the casserole and bake for 4 hours at 300-degrees. The sauce should be well reduced. Strew with parsley before serving. *Canned beans may be used if well-drained and well-rinsed
