Potatoes with Cucumbers (Pommes de Terre aux Concombres) 1 pound potatoes Peel and slice potatoes. Combine these in a skillet with olive oil, salt and pepper, a sprig of fresh basil, a bay leaf, and peeled, seeded tomatoes. Add water to just cover. Put a lid on the pot and cook for 20 minutes over brisk heat. To serve, peel two chilled, young cucumbers, quartering each one, lengthwise. Salt and pepper these and combine them with the potatoes. |
